Ed has worked as nutritionist & chef at Moinhos Velhos retreat for the last 7 years. Giving people advice on diet and health and preparing juices and food. In 2020, the first healthy eating programs were added to the agenda of Moinhos Velhos, a one week program with besides yoga and meditation, 3 healthy and delicious plant-based meals served daily, combined with nutrition classes and cooking workshops, all done by Ed. After 6 six years and hundreds of retreats and multiple remarks from guests that I should write a book, I decided to start that project, which you are now holding in your hands. This is my attempt to answer the questions what to eat, why to follow such a diet, and how to prepare nutritious meals. The science in this book will answer the questions of what and why, while the recipe sections will show you how to prepare your own delicious and healthy plant-based meals. Enjoy. Ed
